4 salmon fillets (about 6 ounces each)
1 can (15 ounces) white beans (such as cannellini or navy), drained and rinsed
1 cup cherry tomatoes, halved
2 cups fresh spinach
1 cup heavy cream
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
Gather and measure all the ingredients. Drain and rinse the beans, halve the cherry tomatoes, and mince the garlic.
In a large skillet, heat olive oil over medium heat.
Season the salmon fillets with salt and pepper. Add them to the skillet, skin-side down, and cook for about 4-5 minutes. Flip and cook for another 3-4 minutes until the salmon is cooked through. Remove the salmon from the pan and set aside.
In the same pan, add minced garlic and halved cherry tomatoes. Sauté for about 2 minutes until the tomatoes begin to soften.
Stir in the spinach and white beans. Cook until the spinach wilts, about 2 minutes.
Pour in the heavy cream and add dried thyme. Stir well to combine and let it simmer for 2-3 minutes until slightly thickened.
Return the cooked salmon to the pan. Spoon the creamy sauce over the salmon and heat for an additional minute.
Remove from heat and garnish with fresh parsley if desired.
