Ingredients
Scale
1 cup all-purpose flour
½ cup powdered sugar
½ cup unsalted butter, softened
¼ teaspoon salt
2 large eggs
1 cup granulated sugar
2 tablespoons all-purpose flour
¼ cup fresh lemon juice (about 2 lemons)
1 tablespoon lemon zest
Powdered sugar, for dusting (optional)
Instructions
Begin by preheating your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
Make the Crust: In a medium bowl, mix together the flour, powdered sugar, softened butter, and salt until it forms a crumbly mixture. Press this mixture evenly into the bottom of the prepared baking dish.
Place the crust in the oven and bake for 15-20 minutes or until lightly golden. Remove from the oven and let it cool slightly.
Prepare the Filling: In a separate bowl, whisk together the eggs and granulated sugar until well combined. Add the flour, lemon juice, and lemon zest, mixing until smooth.
Pour the lemon filling over the pre-baked crust, spreading it evenly.
Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
Once baked, remove the dish from the oven and allow it to cool at room temperature for about 30 minutes. Then, refrigerate for at least 1 hour to allow the filling to set completely.
Once chilled, dust the top with powdered sugar, if desired. Cut into squares and enjoy!
