Instructions

  1. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add onions, celery, and carrots. Cook until softened, about 5-7 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Make the Roux: Sprinkle the flour over the softened vegetables. Stir well to coat and cook for another 2 minutes. This will thicken the bisque.
  4. Incorporate Wet Ingredients: Gradually pour in the seafood stock, whisking continuously to avoid lumps. Add tomato paste, Worcestershire sauce, and Old Bay seasoning; stir until well combined.
  5. Bring to a Simmer: Increase the heat to medium-high and bring the mixture to a simmer, allowing it to cook for about 10 minutes to meld the flavors.
  6. Add the Seafood: Gently fold in the crab meat and shrimp. Reduce the heat to low and let the bisque cook for another 5-7 minutes, or until the shrimp are pink and opaque.
