Scale
For the pastry dough:
2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
8 oz cream cheese, cold and cubed
1/4 teaspoon salt
1 tablespoon granulated sugar
For the filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 egg yolk
For finishing:
1 egg (for egg wash)
1 tablespoon milk
Powdered sugar, for dusting (optional)
Fruit preserves or fresh berries (optional)
Instructions
Make the Dough: Combine flour, salt, and sugar in a large bowl. Add cold butter and cream cheese. Cut in until mixture resembles coarse crumbs. Form into a ball, flatten into a disc, wrap, and chill for at least 1 hour.
Prepare the Cream Cheese Filling: Beat softened cream cheese, sugar, vanilla, and egg yolk until smooth.
Roll and Shape: Preheat oven to 375°F (190°C). Line a baking sheet. Roll dough to 1/8-inch thickness. Cut into 3-inch shapes. Spoon filling into the center of each piece. Add fruit preserves if desired.
Fold and Seal: Fold dough diagonally over filling to create a turnover, sealing edges with a fork, or fold corners inward and pinch to seal.
Egg Wash and Bake: Whisk egg and milk for egg wash. Brush pastries. Bake for 18–22 minutes until golden brown.
Cool and Serve: Let pastries cool slightly, then dust with powdered sugar. Serve warm or at room temperature.
