Crack Chicken Noodle Soup: An Incredible Ultimate Recipe

  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 1 cup frozen peas and carrots
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and cook until they become translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  2. Place the chicken breasts in the pot and pour in the chicken broth. Bring to a boil.
  3. Add dried thyme, salt, and black pepper to the pot, stirring to combine.
  4. Reduce heat to a simmer and cover the pot. Let it cook for 20-25 minutes or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Stir in the egg noodles and cook for about 5-7 minutes, or until they are tender.
  7. Pour in the heavy cream and add the frozen peas and carrots. Stir well and let it simmer for another 5 minutes.
  8. Taste the soup and adjust the seasoning if necessary, adding more salt or pepper to your liking.
  9. Once everything is heated through, turn off the heat and garnish with fresh parsley if desired.
