1 lb. chicken breasts, cooked and shredded
8 oz. elbow macaroni
4 cups chicken broth
1 cup cream cheese, softened
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 packet ranch seasoning mix
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
Chopped green onions, for garnish (optional)
Instructions
In a large pot, bring the chicken broth to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Prepare the Chicken: If you haven’t done so already, cook and shred the chicken breasts. This can be done in advance for ease.
In the same pot used for the macaroni, add the cream cheese, ranch seasoning mix, garlic powder, and onion powder. Stir until the cream cheese is melted and the mixture is smooth.
Add the shredded chicken and cooked macaroni to the pot. Mix well until everything is coated in the creamy sauce.
Stir in the shredded cheddar and mozzarella cheese, allowing it to melt and create a creamy texture throughout the dish.
Taste and season with salt and pepper as needed.
If desired, transfer the mixture to a baking dish for a baked version. Top with more cheese for a crispy topping.
If baking, preheat your oven to 350°F (175°C) and bake for 15-20 minutes, or until the top is golden and bubbly.
Once done, remove from the oven and let it cool slightly. Garnish with chopped green onions if desired.
