- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 6 cups chicken broth
- 2 cups shredded cooked chicken
- 1 ½ cups egg noodles
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
