Cozy Creamy Chicken Noodle Soup: An Amazing Ultimate Recipe

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 ½ cups egg noodles
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Stir in the minced garlic, dried thyme, dried rosemary, and bay leaf. Cook for another minute until fragrant.
  4. Add the chicken broth to the pot, bringing it to a simmer.
  5. Once simmering, add the shredded cooked chicken to the soup.
  6. Stir in the egg noodles and let the soup cook for about 10-12 minutes or until the noodles are tender.
  7. Reduce the heat to low and stir in the heavy cream, mixing well.
  8. Taste the soup and season with salt and pepper as needed.
  9. Remove the bay leaf before serving.
  10. Ladle the soup into bowls and garnish with fresh chopped parsley.
