  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup shredded sweetened coconut
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking oil, for frying
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. If frying, heat oil in a skillet over medium heat. If baking, preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix flour with salt and pepper. In a second bowl, beat the eggs. In a third bowl, mix panko breadcrumbs and shredded coconut.
  3. Line a plate with paper towels for draining, or prepare a wire rack for baking or air-frying.
  4. Dredge each shrimp first in the seasoned flour, then dip into the beaten egg, and finally coat thoroughly with the coconut-panko mixture. Press gently to ensure the coating adheres.
  5. Fry the coconut-crusted shrimp in batches for 2-3 minutes per side until golden brown and cooked through. If baking, place on the prepared baking sheet and cook for 15-18 minutes, flipping halfway through. For air fryer, cook at 375°F for 10-12 minutes.
  6. While the shrimp cook, prepare the pineapple-chili sauce. Blend the pineapple chunks, red chili flakes, rice vinegar, honey, and minced garlic in a blender until smooth.
  7. Pour the blended sauce into a small saucepan and heat over medium heat. Bring to a simmer and cook for 5 minutes.
  8. Stir in the cornstarch slurry and continue to cook, stirring constantly, until the sauce has thickened.
  9. Serve the crispy coconut-crusted shrimp immediately with the pineapple-chili sauce on the side. Garnish with lime wedges or fresh herbs if desired.

  • For a crispier coating, chill the breaded shrimp for 10 minutes before cooking.
