  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup jasmine or basmati rice, rinsed
  • 1 (13.5 oz) can full-fat coconut milk
  • 1½ cups chicken broth (or water)
  • Juice of ½ lime (plus more for serving)
  • Fresh cilantro or green onions for garnish

Instructions

  1. Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and sear for 3–4 minutes until lightly browned. Transfer to a plate.
  2. Sauté aromatics: In the same pan, reduce heat to medium. Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and ginger and cook for 1–2 minutes until fragrant.
  3. Add spices: Sprinkle in turmeric, cumin, and smoked paprika. Toast for about 30 seconds.
  4. Combine rice and liquids: Add rinsed rice and stir to coat in spices. Pour in coconut milk and chicken broth. Stir well, scraping up browned bits.
  5. Return chicken and simmer: Return chicken to the pan. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is cooked and liquid is absorbed.
  6. Finish and serve: Turn off heat and let sit, covered, for 5 minutes. Remove lid, fluff rice, and squeeze in lime juice. Garnish with cilantro or green onions and serve warm.
