8 ounces semi-sweet chocolate, chopped
3 tablespoons unsalted butter
3 large eggs, separated
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
A pinch of salt
Instructions
In a heatproof bowl, combine the chopped chocolate and butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
In a separate bowl, whisk the egg yolks and granulated sugar until pale and thick. Stir in the vanilla extract.
Gradually add the melted chocolate mixture to the egg yolk mixture, stirring until well combined.
In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate the mixture.
In a separate bowl, beat the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no streaks remain.
Spoon the chocolate mousse pudding into individual serving dishes or one large bowl.
Cover and refrigerate for at least 2 hours, or until set.
Once the pudding has chilled and set, it’s ready to be served!
