4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs (preferably Italian seasoned)
1 cup marinara sauce
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Fresh basil leaves (for garnish)
Olive oil (for frying)
Instructions
Preheat your oven to 375°F (190°C).
Place each chicken breast between two sheets of plastic wrap and pound to an even thickness, about ½ inch.
In three separate shallow dishes, place flour in one, beaten eggs in the second, and breadcrumbs mixed with garlic powder, oregano, salt, and pepper in the third.
Dredge each chicken breast first in flour, shaking off excess, then dip in beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
In a large skillet, heat enough olive oil over medium heat to cover the bottom.
Add the breaded chicken breasts in batches and fry for 4-5 minutes on each side until golden brown and cooked through.
Remove the fried chicken and place them in a baking dish.
Spoon marinara sauce over each chicken breast, then sprinkle with mozzarella and Parmesan cheese.
Transfer the baking dish to the preheated oven and bake for 20-25 minutes or until the cheese is bubbly and golden.
Remove from the oven and let the chicken rest for 10 minutes.
