  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook for about 5 minutes until the vegetables are tender.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken broth to the pot and bring it to a boil.
  5. Stir in the shredded cooked chicken and let it simmer for 5 minutes.
  6. Add the egg noodles to the pot and cook according to package instructions, usually about 7-8 minutes.
  7. Stir in the dried thyme, rosemary, salt, and pepper to taste.
