Chicken Fried Mississippi Potato Logs are a delicious and crispy treat that will impress anyone.

Ingredients

  • 4 large russet potatoes
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Oil for frying
  • Chopped parsley for garnish (optional)

Instructions

  1. Wash and peel the russet potatoes. Cut them into log-shaped pieces, about 1 inch thick.
  2. Place the cut potato logs in a bowl and pour the buttermilk over them. Let them soak for at least 15 minutes.
  3. In a separate bowl, combine the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. Mix well.
  4. In a large skillet or deep fryer, heat oil over medium heat to about 350°F (175°C).
  5. Remove the potato logs from the buttermilk, allowing excess liquid to drip off. Dredge each log in the flour mixture.
  6. Carefully place the coated potato logs in the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy.
  7. Remove the logs from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. If desired, sprinkle chopped parsley over the logs for garnish.
