- 4 large russet potatoes
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1 teaspoon black pepper
- Oil for frying
- Chopped parsley for garnish (optional)
- Wash and peel the russet potatoes. Cut them into log-shaped pieces, about 1 inch thick.
- Place the cut potato logs in a bowl and pour the buttermilk over them. Let them soak for at least 15 minutes.
- In a separate bowl, combine the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. Mix well.
- In a large skillet or deep fryer, heat oil over medium heat to about 350°F (175°C).
- Remove the potato logs from the buttermilk, allowing excess liquid to drip off. Dredge each log in the flour mixture.
- Carefully place the coated potato logs in the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy.
- Remove the logs from the oil and place them on a paper towel-lined plate to drain excess oil.
- If desired, sprinkle chopped parsley over the logs for garnish.
- Enjoy your Chicken Fried Mississippi Potato Logs while they are hot and crispy!
