2 boneless skinless chicken breasts, diced
3 cups broccoli florets
12 oz pasta (fettuccine or penne)
4 garlic cloves, minced
1 cup heavy cream
3/4 cup Parmesan cheese, freshly grated
2 tablespoons olive oil
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Bring a large pot of salted water to a boil. Add pasta and cook according to package directions. Add broccoli during the last 2 minutes of cooking. Drain and reserve 1/2 cup pasta water.
In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden and cooked through, about 5–7 minutes. Remove and set aside.
In the same skillet, melt butter and sauté garlic for 1–2 minutes.
Stir in heavy cream and reserved pasta water. Let simmer for 2–3 minutes.
Add chicken, pasta, and broccoli to the skillet. Toss to coat in the sauce.
Remove from heat and stir in Parmesan cheese, salt, and pepper. Mix until smooth and creamy.
Serve warm, garnished with extra cheese or parsley if desired.
