2 cups fresh or frozen cherries, pitted
1 cup granulated sugar
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
½ cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish.
Prepare the cherries: Wash and pit fresh cherries, or thaw and drain frozen ones.
In a large bowl, combine flour, sugar, baking powder, and salt. Mix well.
In a separate bowl, whisk together milk, melted butter, and vanilla extract until fully combined.
Gradually add the wet ingredients to the dry mixture, stirring until just combined. Do not overmix.
Pour the batter into the greased baking dish, spreading it evenly.
Evenly distribute the cherries on top of the batter. Do not stir; they will sink during baking.
Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let it cool for 10-15 minutes before serving.
Notes
This cake can be served warm or at room temperature.
