  • 6 medium russet potatoes, peeled and chopped
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 4 oz cream cheese, softened
  • 4 tablespoons butter, melted
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons chopped chives
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cooked bacon bits (optional)
  • 1/4 cup sliced green onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Boil the chopped potatoes until fork-tender, then drain and return to pot.
  3. Add sour cream, cream cheese, melted butter, milk, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  4. Mix in half of the shredded cheddar cheese.
  5. Transfer mixture to the baking dish and spread evenly.
  6. Top with remaining cheddar cheese.
  7. Bake uncovered for 25–30 minutes until golden and bubbly.
  8. Broil for 1–2 minutes if a crispier top is desired.
  9. Sprinkle with chopped chives and green onions before serving.
