Wholesome and delicious breakfast bars made with ripe bananas, oats, and chocolate chips. Perfect for a healthy snack or quick breakfast.

  • 3 very ripe bananas
  • 1/4 cup smooth natural peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/4 cups quick cooking oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang.
  2. In a medium bowl, mash ripe bananas until smooth. Stir in peanut butter and vanilla extract until well combined.
  3. Add quick cooking oats, salt, and baking powder to the banana mixture. Gently fold until just combined; do not overmix.
  4. Fold in the chocolate chips evenly throughout the batter.
  5. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until edges are golden brown and center is firm.
  6. Let cool in the pan for 20 minutes, then use parchment overhang to lift the slab out. Cool completely on a wire rack before slicing.
