Baked Huli Huli Chicken with Pineapple Glaze is a flavorful dish that combines tender chicken with a sweet and tangy glaze.

  • 4 boneless, skinless chicken breasts
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup pineapple juice
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 cup fresh pineapple chunks (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. In a medium bowl, whisk together the soy sauce, brown sugar, pineapple juice, ketchup, minced garlic, minced ginger, sesame oil, and black pepper.
  2. Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later use. Bake the chicken in the preheated oven for 25 minutes.
  5. After 25 minutes, remove the chicken from the oven. Brush the reserved marinade over the chicken pieces.
  6. Return the chicken to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. In the last 5 minutes of baking, you can add fresh pineapple chunks to the baking dish for additional flavor.
  8. Once cooked, remove the chicken from the oven and let it rest for 5 minutes before slicing.
  9. Transfer the chicken to a serving platter, garnish with fresh pineapple chunks and chopped green onions.
