½ cup vanilla protein powder
⅓ cup almond butter
2 tablespoons honey
1 teaspoon lemon zest
¼ cup dried blueberries
½ teaspoon cinnamon
1 tablespoon chia seeds
1 tablespoon shredded coconut
Instructions
Combine rolled oats, vanilla protein powder, chia seeds, and optional cinnamon in a medium bowl. Whisk until evenly distributed.
Add almond butter, honey, lemon zest, dried blueberries, and shredded coconut to the bowl. Mix thoroughly with a spoon or spatula until a cohesive dough forms.
Ensure all ingredients are well combined, with no dry pockets. If the mixture is too dry, add a touch more honey or almond butter; if too wet, add a bit more protein powder or oats.
Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up, making it easier to handle.
Scoop about 1 tablespoon of the chilled mixture at a time and roll it between your palms to form compact balls, about 1 inch in diameter.
Place the rolled protein bites on a plate or baking sheet lined with parchment paper. Enjoy immediately or store in an airtight container in the refrigerator for up to a week.
