Ingredients

Scale
  • 2 cups All-Purpose Flour
  • 2 cups Granulated Sugar
  • 1 teaspoon Baking Soda
  • 2 teaspoons Ground Cinnamon
  • ½ teaspoon Salt
  • 2 large Eggs
  • 1 cup Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 3 cups Apples (peeled and chopped)
  • 1 cup Chopped Pecans
  • ½ cup Unsalted Butter (for glaze)
  • 1 cup Brown Sugar (for glaze)
  • ¼ cup Heavy Cream (for glaze)
  • 1 teaspoon Vanilla Extract (for glaze)

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a Bundt pan or 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, mix eggs, oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the chopped apples and pecans to create the apple pecan caramel cake batter.
  6. Pour the batter into the prepared pan and smooth the top with a spatula. Tap gently to remove air bubbles.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes before transferring it to a wire rack.
  9. While the cake cools, prepare the caramel glaze. In a saucepan, melt the butter over medium heat.
  10. Stir in the brown sugar and heavy cream. Simmer for 2 minutes, stirring constantly.
  11. Remove the caramel glaze from heat and stir in the vanilla extract.
  12. Pour the warm caramel glaze over the warm apple pecan cake.
  13. Let the glaze set slightly before slicing and serving your delicious caramel apple pecan cake.

Notes

  • Use tart apples like Granny Smith or Honeycrisp for the best texture and flavor contrast.
  • Toasting the pecans before adding them to the batter enhances their nutty flavor and crunch.
  • Avoid overmixing the batter to ensure a tender crumb for your apple pecan caramel cake.
  • Allowing the cake to rest before slicing helps it retain moisture.
  • For an extra treat, serve slices of this apple pecan cake with caramel drizzle with a scoop of vanilla ice cream.
  • If you prefer a stronger spiced flavor, add a pinch of nutmeg or cloves to the dry ingredients.
  • Ensure your pan is well-greased to prevent the apple pecan cake from sticking.
  • Consider doubling the caramel glaze recipe if you like extra caramel sauce on your apple pecan caramel cake.
