Scale
  • 1 cup (2 sticks or 226g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (90g) unsweetened cocoa powder, Dutch-processed
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (85g) chocolate chips or chunks (optional)
  • 2 medium-sized apples, approximately 12-14 ounces total
  • 1 tablespoon all-purpose flour for apples
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons light brown sugar, packed

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper.
  2. Wash, peel, core, and dice the apples into ½-inch pieces.
  3. Coat the apples with 1 tablespoon flour, cinnamon, nutmeg, and brown sugar in a medium bowl.
  4. In another bowl, sift together flour, baking powder, and salt.
  5. Cream together butter and sugar in a large mixing bowl until light and fluffy.
  6. Add eggs one at a time, beating well after each addition, then stir in vanilla.
  7. Mix in cocoa powder until combined.
  8. Fold in the dry ingredients until just combined, then gently fold in the coated apples and chocolate chips.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake for 30-35 minutes, checking for doneness with a toothpick.
  11. Cool completely in the pan, then lift out and cut into squares.
  12. Serve and enjoy with optional toppings.

Notes

  • Use firm, tart apples like Granny Smith or Honeycrisp.
  • Do not overmix the batter to keep brownies fudgy.
  • Allow brownies to cool completely before cutting.
  • Store in an airtight container for up to 4 days or refrigerate for a week.
  • Can be frozen for up to 2-3 months.
