2 salmon fillets (6 oz each)
1 pound new potatoes, quartered
1 lemon, juiced and zested
1 tablespoon honey
2 tablespoons olive oil
2 cloves garlic, minced
1 cup arugula
2 tablespoons fresh dill, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the air fryer to 390°F (200°C) for 3–5 minutes.
Whisk together lemon juice, zest, honey, garlic, 1 tbsp olive oil, salt, and pepper. Reserve half for salmon.
Toss potatoes in the remaining marinade and 1 tbsp olive oil.
Air fry potatoes for 12–15 minutes, shaking halfway through.
Move potatoes to one side, add salmon, and brush with reserved marinade.
Air fry both for an additional 7–9 minutes until salmon is flaky and cooked through.
Plate with arugula and sprinkle fresh dill on top. Serve with extra lemon if desired.
