  • 1 cup mascarpone cheese
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon brewed coffee, cooled
  • Cocoa powder, for dusting

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, sift together the cocoa powder, flour, baking powder, and salt. Set aside.
  3. In a large bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Stir in the cooled brewed coffee until well mixed.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Place the baking sheets in the preheated oven and bake for 15-20 minutes, or until the cookies are set and slightly firm to the touch.
  9. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
  10. In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and cooled coffee. Whip until soft peaks form.
  11. Once the cookies are completely cool, spread a generous amount of filling on the flat side of one cookie. Top with another cookie to create a sandwich.
  12. For an elegant finish, dust the tops of the cookies with cocoa powder before serving.
