Snowball Cake: An Amazing Ultimate Recipe for Every Celebration

  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 cups shredded coconut (sweetened or unsweetened, as preferred)
  • 2 cups powdered sugar (for frosting)
  • ½ cup heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  6. Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
  8. In a bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form.
  9. Place one cake layer on a serving platter. Spread a layer of frosting on top, then add the second layer. Frost the top and sides of the entire cake.
  10. Gently press the shredded coconut onto the frosting, covering the entire cake.
