- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 3 cups shredded coconut (sweetened or unsweetened, as preferred)
- 2 cups powdered sugar (for frosting)
- ½ cup heavy cream (for frosting)
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
- Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
- In a bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form.
- Place one cake layer on a serving platter. Spread a layer of frosting on top, then add the second layer. Frost the top and sides of the entire cake.
- Gently press the shredded coconut onto the frosting, covering the entire cake.
