- 1/2 cup granulated sugar (divided)
- 1/3 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy cream (chilled)
- 2 tablespoons powdered sugar
- 1/2 cup unsalted butter (softened)
- 1 1/2 cups powdered sugar
- 1/4 cup cocoa powder
- 1 tablespoon milk or cream
- Preheat the oven to 375°F (190°C). Line a jelly roll pan (10×15 inches) with parchment paper.
- In a mixing bowl, sift together 1/2 cup granulated sugar, 1/3 cup flour, 1/4 cup cocoa powder, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
- In another bowl, beat 4 large egg yolks with 1/4 cup sugar until thick and pale.
- Gently fold the sifted flour mixture into the egg yolk blend until just combined.
- In a clean bowl, beat 4 egg whites until they form stiff peaks. Gradually add 1/4 cup remaining sugar.
- Carefully fold the whipped egg whites into the batter.
- Pour the batter into your prepared jelly roll pan, spreading it evenly.
- Bake for about 12 minutes, or until the cake springs back when touched.
- Dust a clean kitchen towel with powdered sugar, invert the cake onto the towel and roll it tightly while warm.
- Whip 1 cup chilled heavy cream with 2 tablespoons powdered sugar until stiff peaks form.
- Unroll the cake and spread the whipped cream filling evenly over the surface.
- Gently roll the cake back up tightly, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Beat 1/2 cup softened unsalted butter with 1 1/2 cups powdered sugar and 1/4 cup cocoa powder. Add 1 tablespoon milk until creamy.
