Classic Yule Log is a delightful holiday dessert that brings joy to gatherings.

Ingredients

  • 1/2 cup granulated sugar (divided)
  • 1/3 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream (chilled)
  • 2 tablespoons powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon milk or cream

Instructions

  1. Preheat the oven to 375°F (190°C). Line a jelly roll pan (10×15 inches) with parchment paper.
  2. In a mixing bowl, sift together 1/2 cup granulated sugar, 1/3 cup flour, 1/4 cup cocoa powder, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  3. In another bowl, beat 4 large egg yolks with 1/4 cup sugar until thick and pale.
  4. Gently fold the sifted flour mixture into the egg yolk blend until just combined.
  5. In a clean bowl, beat 4 egg whites until they form stiff peaks. Gradually add 1/4 cup remaining sugar.
  6. Carefully fold the whipped egg whites into the batter.
  7. Pour the batter into your prepared jelly roll pan, spreading it evenly.
  8. Bake for about 12 minutes, or until the cake springs back when touched.
  9. Dust a clean kitchen towel with powdered sugar, invert the cake onto the towel and roll it tightly while warm.
  10. Whip 1 cup chilled heavy cream with 2 tablespoons powdered sugar until stiff peaks form.
  11. Unroll the cake and spread the whipped cream filling evenly over the surface.
  12. Gently roll the cake back up tightly, wrap in plastic wrap, and refrigerate for at least 1 hour.
  13. Beat 1/2 cup softened unsalted butter with 1 1/2 cups powdered sugar and 1/4 cup cocoa powder. Add 1 tablespoon milk until creamy.
  14. Spread the buttercream frosting over your chilled Yule Log.
  15. Garnish with powdered sugar, cranberries, and sprigs of rosemary.
