  • 1 can (14.5 oz) diced tomatoes

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish (optional)
  • Sour cream for serving (optional)
  • Shredded cheese for serving (optional)
  • Avocado slices for serving (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon.
  3. Stir in the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
  4. Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to coat the meat and vegetables.
  5. Pour in the diced tomatoes, kidney beans, black beans, and corn. Mix thoroughly.
  6. Add the broth to the pot, bringing the mixture to a simmer.
  7. Reduce the heat to low and let the chili simmer for 30-40 minutes, allowing the flavors to meld together.
  8. Taste the chili and adjust the seasoning if necessary, adding more salt, pepper, or cayenne for extra heat.
  9. Once ready, serve the chili hot, garnished with fresh cilantro, sour cream, shredded cheese, or avocado slices as desired.
