- 1 pound ground beef (or turkey for a healthier option)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 cups beef or vegetable broth
- 2 tablespoons olive oil
- Fresh cilantro for garnish (optional)
- Sour cream for serving (optional)
- Shredded cheese for serving (optional)
- Avocado slices for serving (optional)
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon.
- Stir in the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
- Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to coat the meat and vegetables.
- Pour in the diced tomatoes, kidney beans, black beans, and corn. Mix thoroughly.
- Add the broth to the pot, bringing the mixture to a simmer.
- Reduce the heat to low and let the chili simmer for 30-40 minutes, allowing the flavors to meld together.
- Taste the chili and adjust the seasoning if necessary, adding more salt, pepper, or cayenne for extra heat.
- Once ready, serve the chili hot, garnished with fresh cilantro, sour cream, shredded cheese, or avocado slices as desired.
