1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs (preferably panko for extra crunch)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
Salt and pepper to taste
Oil for frying (vegetable or canola)
Instructions
In a bowl, combine the shredded mozzarella and cheddar cheese. Mix well and set aside.
Set up a breading station: In three separate bowls, place the flour, beaten eggs, and breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
Take about a tablespoon of the cheese mixture and form it into small balls or bites. Repeat until all cheese is used.
Roll each cheese ball in flour, dip it in the beaten eggs, and then coat it with the seasoned breadcrumbs. Make sure each bite is fully covered.
In a deep skillet or pot, heat about 2 inches of oil over medium heat until hot (approximately 350°F/175°C).
Carefully add a few cheese bites to the hot oil, being cautious not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown, turning occasionally for even cooking.
Use a slotted spoon to remove the fried cheese bites and place them on a paper towel-lined plate to drain any excess oil.
Continue frying the remaining cheese bites in batches until all are cooked.
Notes
Serve with marinara sauce or your favorite dipping sauce.
