2 cups fresh broccoli florets
1 large onion, thinly sliced
1 tablespoon olive oil
2 cups shredded cheddar cheese
1 cup sour cream
1 cup cream of mushroom soup
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup French fried onions (for topping)
½ teaspoon dried thyme (optional)
Instructions
Set your oven to 350°F (175°C) to prepare for baking.
In a pot of boiling water, blanch the broccoli florets for 2-3 minutes. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-12 minutes. Stir occasionally to prevent burning.
In a large bowl, combine the sour cream, cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Mix well.
Add the blanched broccoli and caramelized onions to the bowl. Stir in 1½ cups of shredded cheese. Mix until everything is evenly coated.
Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
Sprinkle the remaining ½ cup of shredded cheese over the top. Then, add the French fried onions for added crunch.
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is melted and bubbly.
Once out of the oven, let it cool for a few minutes before serving.
