½ cup unsalted butter, melted
2 tablespoons granulated sugar
2 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups peeled and sliced apples (such as Granny Smith)
1 teaspoon ground cinnamon
½ cup caramel sauce (store-bought or homemade)

Instructions
Preheat your oven to 325°F (160°C).
Make the Crust: In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust.
Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and vanilla extract, mixing until creamy.
Add Eggs: Beat in the eggs, one at a time, until fully incorporated. Be careful not to overmix.
Layer the Apples: Fold in the sliced apples and ground cinnamon gently. Pour the cheesecake mixture over the apple layer in the pie crust.
Bake: Place the pie in the preheated oven and bake for 55-60 minutes, or until the center is set and slightly jiggly.
Cool: Remove from the oven and allow the pie to cool at room temperature for about 30 minutes. Then refrigerate for at least 2 hours to firm up.
Drizzle Caramel: Once chilled, drizzle caramel sauce over the top of the pie before serving.
