2 pounds baby potatoes (or any small potatoes)
4 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar cheese (or your preferred cheese)
¼ cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the baby potatoes thoroughly. Cut them in half or quarters if they are larger.
In a large bowl, combine the olive oil, minced garlic, garlic powder, onion powder, paprika, salt, and black pepper. Add the potatoes and toss until coated.
Spread the seasoned potatoes evenly on a baking sheet lined with parchment paper.
Place the baking sheet in the preheated oven and roast for about 25-30 minutes, flipping halfway through.
Once crispy, remove from the oven and sprinkle the shredded cheddar and Parmesan cheese over the potatoes.
Return the baking sheet to the oven for an additional 5 minutes, until the cheese is melted.
Remove from the oven and sprinkle with freshly chopped parsley.
Allow to cool slightly before serving, but enjoy warm.
