  • 2 pounds baby potatoes (or any small potatoes)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the baby potatoes thoroughly. Cut them in half or quarters if they are larger.
  3. In a large bowl, combine the olive oil, minced garlic, garlic powder, onion powder, paprika, salt, and black pepper. Add the potatoes and toss until coated.
  4. Spread the seasoned potatoes evenly on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, flipping halfway through.
  6. Once crispy, remove from the oven and sprinkle the shredded cheddar and Parmesan cheese over the potatoes.
  7. Return the baking sheet to the oven for an additional 5 minutes, until the cheese is melted.
  8. Remove from the oven and sprinkle with freshly chopped parsley.
  9. Allow to cool slightly before serving, but enjoy warm.
