Creamy Garlic Chicken & Mushroom Pasta is a delicious and comforting dish that combines tender chicken, sautéed mushrooms, and a creamy garlic sauce over fettuccine.
In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat.
Add the sliced chicken to the skillet. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms. Sauté for 3-4 minutes until they are tender and lightly browned.
Add the minced garlic to the mushrooms and sauté for an additional 1-2 minutes until fragrant.
Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and let it cook for 2-3 minutes until slightly thickened.
Return the cooked chicken to the skillet, and add the drained pasta. Toss everything together to coat the pasta in the creamy sauce.
Stir in the grated Parmesan cheese until melted and combined. Adjust seasoning with salt and pepper if necessary.
Remove from heat and garnish with chopped parsley before serving.
