4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried basil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large skillet, heat the olive oil over medium heat.
Season the chicken breasts with salt and pepper. Add them to the skillet and cook for about 5-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
Pour in the chicken broth and scrape any browned bits from the bottom of the skillet. Add the heavy cream, thyme, and basil. Stir well to combine.
Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 5 minutes.
Place the chicken breasts back into the skillet, spooning the sauce over them. Simmer for an additional 5 minutes to heat through.
Remove from heat and sprinkle with fresh parsley before serving.
