- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 2 large eggs, at room temperature
- 1/2 cup orange juice, freshly squeezed
- 1 zest of orange
- 1 cup fresh cranberries, chopped
- powdered sugar, for dusting
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine flour, sugar, baking powder, and salt. Whisk until blended.
- Add softened butter and beat on medium speed for about 3 minutes until light and fluffy.
- Crack in eggs one at a time, mixing well after each. Add orange juice and zest, stirring until smooth.
- Fold in chopped cranberries until evenly distributed in the batter.
- Transfer the batter into a greased 9×13 inch baking dish, spreading it evenly.
- Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
