Deliciously Moist Cranberry Orange Breakfast Cake Recipe

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2 large eggs, at room temperature
  • 1/2 cup orange juice, freshly squeezed
  • 1 zest of orange
  • 1 cup fresh cranberries, chopped
  • powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugar, baking powder, and salt. Whisk until blended.
  3. Add softened butter and beat on medium speed for about 3 minutes until light and fluffy.
  4. Crack in eggs one at a time, mixing well after each. Add orange juice and zest, stirring until smooth.
  5. Fold in chopped cranberries until evenly distributed in the batter.
  6. Transfer the batter into a greased 9×13 inch baking dish, spreading it evenly.
  7. Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust the top with powdered sugar before serving.
