1 cup coconut milk
1 cup whole milk
½ cup granulated sugar
¼ cup cornstarch
¼ teaspoon salt
½ teaspoon vanilla extract
1 cup shredded coconut (sweetened or unsweetened)
2 large egg yolks
Toasted coconut flakes for garnish (optional)
Instructions
In a medium saucepan, whisk together the coconut milk, whole milk, sugar, cornstarch, and salt until smooth.
Place the saucepan over medium heat, stirring constantly until the mixture begins to thicken, about 5-7 minutes.
In a separate bowl, lightly beat the egg yolks. Gradually add a few tablespoons of the hot milk mixture to the yolks, whisking continuously to temper them.
Slowly pour the egg yolk mixture back into the saucepan while stirring constantly. Continue to cook for another 2-3 minutes until the pudding is thick and creamy.
Remove the saucepan from the heat, and stir in the shredded coconut and vanilla extract until well combined.
Transfer the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
Place the pudding in the refrigerator for at least 2 hours or until it’s chilled and set.
Before serving, top with toasted coconut flakes for added texture and flavor.
