Ingredients
Scale
1 cup unsweetened cocoa powder
1 cup granulated sugar
1 cup brown sugar, packed
1 cup unsalted butter, melted
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup chocolate chips (optional)
Instructions
Prepare the Crockpot: Grease the inside of your crockpot with cooking spray or line it with parchment paper for easy removal.
Mix Cocoa and Sugars: In a large mixing bowl, combine the unsweetened cocoa powder, granulated sugar, and brown sugar. Mix well.
Add Melted Butter: Pour in the melted unsalted butter and stir until fully combined with the sugar mixture.
Incorporate Eggs and Vanilla: Add the eggs and vanilla extract to the bowl. Mix until smooth and well incorporated.
Blend in Dry Ingredients: Gently fold in the all-purpose flour, baking powder, and salt. Mix until just combined to avoid overmixing.
Add Chocolate Chips: If desired, fold in the chocolate chips for an extra chocolatey touch.
Pour into Crockpot: Pour the brownie batter into the prepared crockpot, spreading it evenly.
Cover and Cook: Cover the crockpot with its lid and set it to cook on low heat for 2 to 3 hours. Check for doneness after 2 hours; a toothpick inserted should come out with a few moist crumbs.
Cool and Serve: Once cooked, turn off the crockpot and allow the brownies to cool slightly before cutting them into squares.
Notes
Store leftovers in an airtight container for up to 3 days.
