- 1 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon flaky sea salt (plus extra for sprinkling)
- 1 teaspoon pure vanilla extract
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
- Mix in the pure vanilla extract until fully combined.
- Gradually combine the all-purpose flour with the butter mixture, stirring gently until just blended.
- Form the dough into a log about 2 inches in diameter. Wrap it tightly in plastic wrap and chill in the fridge for at least 1 hour until firm.
- After chilling, carefully slice the dough into 1/4-inch rounds, placing them at least an inch apart on your prepared baking sheet.
- Lightly dust each cookie with flaky sea salt.
- Bake for 12-15 minutes, or until the edges are golden brown while the centers remain pale.
- Let the cookies sit on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
