  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon flaky sea salt (plus extra for sprinkling)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  3. Mix in the pure vanilla extract until fully combined.
  4. Gradually combine the all-purpose flour with the butter mixture, stirring gently until just blended.
  5. Form the dough into a log about 2 inches in diameter. Wrap it tightly in plastic wrap and chill in the fridge for at least 1 hour until firm.
  6. After chilling, carefully slice the dough into 1/4-inch rounds, placing them at least an inch apart on your prepared baking sheet.
  7. Lightly dust each cookie with flaky sea salt.
  8. Bake for 12-15 minutes, or until the edges are golden brown while the centers remain pale.
  9. Let the cookies sit on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
