Ingredients
Scale
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1/2 cup milk
1/4 cup unsalted butter, melted
1 tablespoon vanilla extract
1 cup fresh blueberries (or frozen, thawed and drained)
1/2 cup heavy cream (for syrup)
1/2 cup granulated sugar (for syrup)
1/2 cup water (for syrup)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or a similar-sized oven-safe dish.
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
Gradually add the wet mixture to the dry ingredients. Stir until just combined; be careful not to overmix.
Gently fold in the blueberries, being careful not to break them.
Pour the batter into the prepared baking dish, spreading it evenly.
Place the dish in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
While the pudding is baking, combine the heavy cream, sugar, and water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves. Bring to a gentle boil, then remove from heat.
Once the pudding is done baking, remove it from the oven. Immediately pour the syrup over the hot pudding, allowing it to soak in.
Let the pudding cool for about 10-15 minutes before serving.
